Vanilla Cake + Raw Chocolate frosting (Vegan ~ Organic)

Growing up, I absolutely loved coming home from school to a house smelling of freshly baked goodies; the smell wafting out the door and down the street, inviting us home after a busy day.

I looked forward to being able to bake for my children one day; thrilled by the idea of seeing their faces light up as tasty treats were placed before them!

Now that I have a little one, I have grown to love baking, and even more so, love the challenge of trying new vegan recipes and recreating traditional recipes my mum made for us as children, and turning them vegan.

My pantry is usually well stocked with a variety of organic vegan staples, and it is with these that I try and create varieties of delicious vegan foods, so I minimise complexity and minimise ingredient lists.

Today I felt a desire to bake a simple Vanilla cake, and use the last of my supply of cacao, to finish it off with a raw chocolate frosting!

This is simple and easy, and can include numerous ingredient switches if you choose to replace the flour to a gluten-free option, and replace coconut sugar with maple syrup.

You could even double the cake recipe, and have a double-tiered cake with a coconut yoghurt inner- YUM!

Otherwise, keep it simple, and add a scoop of Almond Milk Ice-cream on the side!

Vanilla Cake:

1 ¾ cup Organic Unbleached Plain Flour

1 cup Organic Coconut Sugar

1 tsp Aluminum Free Bi-Carb soda

Pinch Celtic Sea Salt

1 cup Organic Almond milk

½ cup Organic Cold-Pressed Coconut Oil

2 tsp Vanilla Extract

1 tbsp Organic Apple Cider Vinegar

Frosting:

½ cup Organic Raw Cacao Powder

¼ cup Organic Almond milk

2 tbsp Organic Cold-Pressed Coconut Oil

¼ cup Organic Maple Syrup

1 tsp Vanilla Extract

Method:

Preheat oven to 180 degrees. Mix all ingredients for the base in a bowl until smooth. Pour into an oiled cake pan. Bake for 35-45 minutes, until cooked through and golden. Remove from oven and allow to cool.

For the Frosting: Combine all ingredients in a bowl and lather over the cooled cake. Decorate as desired. Super delicious with a dollop of Almond Milk Ice-cream or Coconut Yoghurt! xo
